When Mike Santolupo opened Brookside Bagels in Springfield four years ago he had no idea that some A list celebrities would be eating his bagels.

After Earth

M. Night Shyamalan and Will Smith recently wrapped up filming their new movie, After Earth, at Sun Center Studios in Aston. Brookside Bagels delivered fresh bagels, muffins, danish, and more to Sun Center Studios Monday through Friday for the past year, while After Earth was filming. Santolupo proudly displays the After Earth movie poster in his bagel shop and even spotted Will Smith while making a daily delivery to the production studio.

Brookside Bagels makes its hand-rolled bagels from scratch from a New York recipe. The bagels are kettle boiled and then baked in the authentic New York tradition. 

Santolupo learned the craft of making "water bagels" from his brother-in-law who is the owner of Custom Bagels in Media. 

"The main difference in our bagels is that they are made from scratch and hand rolled," said Santolupo. "Most places get in frozen dough and just bake it."

Pumpkin Bagels Are Coming

Brookside Bagels makes 18 bagel varieties and seasonal specials like pumpkin which will be available in October and November. They also make their own flavored cream cheeses. 

"French toast is our most popular bagel flavor," said Santolupo. "Cinnamon raisin is another favorite." 

Way More Than Just Bagels

"We made sandwiches for breakfast and lunch on our handmade bagels and we serve New England coffee," said Santolupo. "Plus we offer freshly baked muffins and danish." 

If bagels just aren't your thing, Brookside Bagels, which is operated by Santolupo, his wife, and one employee, also make its own bread from scratch. In addition to making sandwiches with Boar's Head meats, Brookside makes its own chicken, tuna, and egg salads.
